Creamy Beef Stroganoff


1 lb. Deli Thin Sliced Roast Beef (slice into thin strips)
1 -8 oz. Package of Baby Portobellos (wiped clean & sliced)
1 Vidalia Onion (sliced)
1 Garlic Clove (grated)
1 tbsp. Light Butter + nonstick cooking spray
2 tsp. Worcestershire Sauce
1/4 cup Sour Cream
1/4 cup Water
1 tsp. Kitchen Bouquet *optional
Salt & Pepper to taste

Spray a large skillet with nonstick spray and melt butter into it.  Add mushrooms and season with s & p to taste.  Cook over medium heat for 5 to 8 minutes until tender and starting to brown.  Add more cooking spray if necessary and add onions and garlic.  Cook for another 5 minutes then add the worcestershire sauce and water to loosen all the bits on the bottom of the pan.  Stir in the sour cream and season to taste.  Lastly add in the sliced roast beef and stir everything together.  Cook for another 5 to 7 minutes.

Serve as is, with a slice of provolone cheese melted over top or make it into a sandwich.  I had mine stuffed into a Kangaroo Itsy-Bitsy MultiGrain Pita Pocket (I got them at Target) with a slice of provolone and tomato.  Yummy!!!
