Low Carb Seafood Corn Chowder


Ingredients

2- 6 oz. cans of Crab Meat
6 oz. Sea Scallops (diced)
1 lb. Extra Large Shrimp 18/20's (tails off, roughly chopped)
1- 8 oz. pkg. Louis Kemp Lobster Delights
4 slices Low Sodium Bacon (chopped in 1/2" pieces)
1- 12 oz. bag of Steamfresh Frozen Garlic Cauliflower (chopped)
1 1/2 cups Frozen Corn Kernels
1/2 Sweet Onion (diced)
2 stalks Celery (finely diced)
4 cups Low Sodium Chicken Broth
2 cups Milk (I used Lactaid)
2 cups Heavy Cream
1 to 2 tbsp Xanthan Gum (depending how thick you like it, I used 2)
1/2 tsp Dried Thyme
2 tbsp Old Bay seasoning
2 tsp Sea Salt
2 tbsp Diced Pimentos
2 tbsp Chopped Parsley
1 tbsp Butter *optional
Pepper to taste

Let's first start by cooking our bacon in the soup pot.  Once bacon is crisp remove it with a slotted spoon to some paper towel.  Depending on how fatty your bacon was you'll want to drain off all but 1 tbsp of the drippings.  Add your celery and onions to the bacon fat and saute over medium-low heat for 5 minutes.  Meanwhile season all your seafood with the salt and pepper to taste. Once your onions are translucent add your milk, heavy cream, broth, thyme and Old Bay to the pot and raise the heat to medium-high and bring to a simmer.  When soup is simmering you are ready to thicken it with the xanthan gum. (I like to use a small strainer and sift it in while whisking to avoid any clumping.)  Now add your frozen corn and cauliflower (which will help loosen the soup a little more.)  Simmer for 10 minutes then reduce the heat to medium-low and add all your seafood, bacon pieces and pimentos.  Continue to simmer for 10 minutes or until seafood is cooked through.  Now off the heat add your parsley, butter and season with pepper to taste.
This is a very comforting creamy chowder recipe for those cooler fall days.
Recipe makes A LOT of chowder (which is great if you have a large family like me.)

Serving size 1 cup
Makes about 10 servings


French Onion Chicken Soup

I've been craving some of my all time favorite soup lately, so I decided to come up with a way to make it with more protein so it's worth eating for a WLS patient.  This is what I came up with, it's easy and VERY tasty.

Ingredients

4 cups Beef Stock
2 Large Sweet Onions (thinly sliced)
1 Shallot (thinly sliced)
1/2 cup Tyson Grilled Diced Chicken (chopped)
4 slices Pepperidge Farm Very Thin Wheat Bread
4-8 slices Baby Swiss Cheese (or Gruyere)
1/4 tsp. Dried Thyme
2 tsp. Worcestershire sauce
3 tbsp. Land O' Lakes Light Butter
4 tbsp. Parmesan Cheese
Salt & Pepper to taste

Melt 2 tbsp. of butter in a saute pan.  Add your onions and shallot.  Reduce heat to medium, cover and cook for 20 minutes, stirring occassionally.  Meanwhile in a saucepan add the beef stock, dried thyme, salt and pepper to taste and bring to a simmer.  After 20 minutes raise the heat on the onions to medium high, remove the cover and cook onions for 10 more minutes until nice and golden and sweet. 
Add a ladle of stock to the saute pan to deglaze and pick up all the bits from the pan.  Set a 1/4 cup of this mixture aside to cool slightly for pureeing.  Add the rest of the onions and the chicken to the beef stock.  Meanwhile, puree the onion mixture we set aside with 1/2 tbsp of butter (this will thicken the soup slightly).  Stir the puree into the stock and simmer for 10 minutes.  While the soup is simmering toast your slices of bread and use the remaining 1/2 tbsp butter to spread onto the toast. 
Preheat your toaster oven broiler at the highest temperature.
Once soup has simmered for 10 minutes turn off the heat and carefully ladle into four 8 oz. ramekins, add 1 tbsp. of parmesan cheese to each ramekin and stir.  Top each ramekin with a slice of toast and 1 to 2 slices of baby swiss (depending on how cheesy you like it).
Place the ramekins on a baking pan and carefully put it in the toaster oven for 5 to 8 minutes or until cheese is nicely melted and gooey.

Shrimp Wonton Soup





Ingredients

10 Nasoya Wonton Wrappers

Wonton Filling

1/4 cup Leftover Shrimp dumpling filling (recipe here)

Broth

8 cups water + 2 tbsp. Low Sodium Chicken Bouillon Powder
1/2 tsp. Xanthan gum
1/4 cup Frozen Chopped Leaf Spinach
1 1/2 tsp. Dumpling dipping sauce (see recipe here)
Ground White Pepper to taste
1 Green onion (chopped) *optional

Place wonton wrapper in your hand so that it looks like a diamond. Add about a teaspoon of filling.
Wet the upper edges with water and fold the bottom half over and press at the seams to seal.
Wet one of the lower edges and bring both ends together and press to seal.
Set wontons aside.  In a 6 quart saucepan combine the water, bouillon, xanthan gum and dipping sauce whisk until the xanthan gum and bouillon have dissolved and bring to a boil.  Once boiling lower heat to medium and carefully add  your wontons.  Stirring constantly so that dumplings do not stick to the bottom.  Once wontons float to the top add your spinach, simmer for 2 minutes and turn off the heat.
Add 2 to 4 wontons to a bowl and ladle some broth over it, top with green onions.

These delicate wontons are sure to satisfy your urge for chinese!

NOTE:  The wonton wraps I use have 30g net carbs for 8 wraps.  So it's about 4g carbs per wrap, which I don't think is that bad, especially considering they are filled with protein and they are quite light.

Spicy Quinoa Shrimp Soup


I made this yummy soup tonight that reminded me so much of tortilla soup.  Only this one is packed with protein and good carbs.  This recipe is most definitely going to be a keeper!


Ingredients


12 Large Shrimp (cleaned, tails removed)
1 cup Quinoa (washed thoroughly)
4 cups Chicken Broth
1/4 cup Onion (diced)
1/4 cup Carrot (diced)
2 Garlic Cloves (minced)
1 cup Frozen Corn Kernels
1 can Bush's Best Seasoned Black Beans
1 can Diced Tomatoes w/Roasted Garlic
1/2 tsp. Ground Cumin
1/2 tsp. Spanish Paprika
1/2 tsp. Old Bay seasoning
1/4 tsp. Ground Coriander
1/3 tsp. Ground Oregano
1 tbsp. Lime Juice
1 1/2 tbsp. Chopped Cilantro
1 tbsp. Extra Virgin Olive Oil
Cholula Chile Lime Hot Sauce to taste
Pepper to Taste


Heat olive oil in a 3 quart sauce pan and add onions and carrots.  Saute for 2 to 3 minutes, then add the quinoa and cook for another 3 minutes.  Add garlic and cook for 2 minutes before adding the diced tomatoes, black beans, corn and chicken broth.  Add the dry spices, stir, cover and simmer for 30 minutes.  After 30 minutes add the shrimp, cilantro and lime juice and cook for 5 minutes or until shrimp are pink.  Add hot sauce to taste.  Serve with a dollop of sour cream or greek yogurt.

Creamy Corn Egg Drop Soup



Ingredients

4 cups Chicken Broth
1 cup Frozen Corn + 1 tbsp. water (thawed, blended and strained)
1/2 tsp. Xanthan Gum Powder
1/8 tsp. White Pepper
2 eggs + 2 tbsp. water (beaten)

Bring chicken broth with white pepper to a boil in a 4 quart saucepan.  Meanwhile prepare your corn in a blender. And then strain it to leave behind any pieces of corn.  Slowly add the xanthan gum to the broth whisking continuously. (Don't worry if it clumps, just keep whisking and it will dissolve completely.)  Once everything is smooth add in the corn.  Bring soup back up to a simmer.  Now while stirring clockwise, slowly pour in the eggs.  Turn off the heat and serve.  Top with some scallions and soy sauce to taste.

This is a great soup for the "full liquids" stage (just be sure to blend it all together) and for the "pureed" stage, as is.

Tasty Shrimp Gumbo


Ingredients


6 cups Low Sodium Chicken Broth
1 lb. Large Shrimp (peeled, deveined and tails off)
1 lb. Bag Frozen sliced Okra (thawed)
1 rib Celery (diced)
1 cup Frozen diced Peppers & Onions (I used the Quirch brand)
3 Garlic cloves (minced)
2 tbsp. Tomato Paste
2 tbsp. Reduced Sugar Ketchup
1- 14.5 oz. Can of No Salt Diced Tomatoes
1 tsp. Kitchen Bouquet Browning Sauce
1 tsp. Dried Thyme
1 1/2 tsp. Old Bay
1/2 tsp. Ground Oregano
2 tbsp. Land O Lakes Light Butter
Salt and Pepper to taste

Melt butter in a 7 quart cast iron pot.  Add celery, peppers and onions and cook for 4 to 5 minutes until tender.  Add garlic and cook 2 more minutes.  Then add your browning sauce, tomato paste and ketchup, cook for 1 minute and add chicken broth and seasonings. Bring to a boil.  Add the okra and diced tomatoes and reduce heat to medium.  Cook for 20 minutes uncovered.  Take 1 cup of the okra and diced tomatoes with a little broth and puree in a blender. (This will be the thickener for the gumbo.)  Pour the pureed mixture back into the pot and cook for another 10 minutes covered.  Now add the shrimp and reduce heat and let it cook for another 10 minutes. (Be sure that you pat dry your shrimp so they don't water down the gumbo.)

Serve as is or with a little brown rice.

Black Bean, Barley and Turkey Chili/Stew


So I had some left over meat from Friday's taco dinner and I didn't want to throw it out, so I came up with this tasty chili/stew to use it up.  The family really liked this one!

Ingredients

4 cups Beef Broth + 4 cups Water
2 cups left over Taco Meat (see recipe)
1/2 cup dry Quick Cooking Pearled Barley (washed)
1 can Bush's Best Black Beans
1 tbsp. Tomato Paste
1/4 cup Reduced Sugar Ketchup
1/2 cup Onions (diced)
1-14.5 oz. can No Salt Added Diced Tomatoes
1/2 tsp. Garlic Powder
1/2 tsp. Onion Powder
1/2 tsp. Ground Coriander
1/2 tsp. Ground Cumin
2 tsp. Chili Powder
1/2 of a seeded Chipotle Pepper in Adobo Sauce (or to taste) minced
1/4 tsp. Adobo Sauce
1 cup Frozen Corn Kernels
1 tbsp. Olive Oil
1/2 tbsp. Cilantro (chopped)
Pepper to taste

In an 8 quart pot heat olive oil, then add onions and saute for 3 minutes or until translucent.  Add the beef broth and water and bring to a boil. Once boiling add the remaining ingredients except the Cilantro.  Return to a boil then simmer on medium-low for 1 hour (stirring occassionally).  After 1 hour turn off the heat and stir in the cilantro.
Serve topped with shredded cheddar cheese, sour cream, fresh tomatoes and avocado.
