Chimichurri-style Grilled Chicken

Ingredients

4 Chicken Tenderloins
1 cup Cilantro
1 tbsp. Dried Parsley
1 tsp. Dried Whole Oregano
Juice of 1 Lime
5 Garlic Cloves
1 tbsp. Red Wine Vinegar
3 tbsp. Olive Oil
1/2 tsp. Sea Salt
Pepper to taste

Add all ingredients, except the chicken tenderloins to the bowl of your food processor.  Pulse a few times until garlic is completely minced and everything is an even consistency.
Place chicken tenderloins in a ziploc bag with the sauce and marinate for at least 30 minutes.
Once chicken has marinated, preheat your indoor grill to it's highest setting.  Add the chicken tenderloins to the grill, cook and cover for 5 minutes then flip chicken and cook on the other side for another 3 to 4 minutes covered.  Once tenders are cooked through, remove from heat and let them rest covered for 2 or 3 minutes.
Serve with a nice salad or topped with a little homemade guacamole and sour cream.

Just Desserts!!!

Lately I've been having the urge to make some WLS friendly desserts.  Since I don't want to feel like I'm neglecting myself all the foodie pleasures I once over-indulged in.  So I think it's time for me to start coming up with some sugar-free tasty treats. 
I recently purchased an ice cream maker that I have been experimenting with, but unfortunately I still haven't come across any results that I have been completely satisfied with.  I also got this cotton candy maker, which is GREAT!  I have been able to make sugar-free cotton candy!!! How awesome is that?  I bought a container of Crystal Light Sugar-free candies, which I crush up and turn into cotton candy.
Anyhow, expect to see some tasty treats coming in the very near future.

Almost Halfway There!

WOW!!!!  I can't believe that I'm almost halfway to my goal weight and it's only been 4 months since I had my surgery.  I never would have thought that I could come so far in such a small amount of time.  I went shopping for clothes this past week to pick up a few things because most of my old stuff are just way TOO BIG!  I was looking for a new bathing suit because all my old ones weren't working for me anymore and I started out trying a size 24, then a 22, then 20 and finally the 18 was the one that fit me!  I just couldn't believe it.  I can't remember the last time I fit into a size 18.  I use to wear a size 30/32 top and 26/28 bottom.  Can you believe it?!  In 4 months I've dropped 6 sizes!  I sometimes look at myself and pictures I have from before surgery and I still can't believe that I'm that same person.
I'm sooooo excited for summer this year and to hopefully have to go and buy yet another bathing suit for my B-day.  :)

Vitamin Water Goodness!





I went to the supermarket the other day and was looking at the many vitamin waters they had. 
This one caught my eye right away because I had never heard of it or seen it before.  So I grabbed the last 2 bottles they had to give them a try.  I had tried almost every other brand there is out there that is low in sugar, but none of them have or better yet DON'T have what Vidration has, and that is ZERO carbs, ZERO sugar and ZERO calories!
Granted I thought "this probably isn't gonna be that great", but boy was I mistaken!  I think this is the BEST vitamin water I have tried.  So far of the flavors I tried I like the Lemon-Lime flavor the best.  It's not overly sweet like some of the other waters out on the market and it doesn't have that artificial taste either.
It is a bit difficult to come across since the only place I've seen it is at my local Publix, but there are places online where you can get it.
So go out there and find yourself a bottle of Vidration, you're gonna thank me!  :)

I've Fallen In Love!

I've fallen in love with "Milk".  OMG... I was never really big on drinking milk, but the other day I picked up a carton of Hood Calorie Countdown Chocolate drink.  It is absolutely DELICIOUS!  The best part of it is that it's packed with protein.  A cup of this chocolatey goodness has 8g of protein, 3g sugar, 4g net carbs and 90 calories.  I had been drinking plain Lactaid, but I am definitely going to start buying the Hood Calorie Countdown 2%.

To up the protein even more when I drink this concoction of goodness I blend it with 1/2 cup to 1 cup of ice, 1 tbsp. SF Chocolate syrup and 1 scoop GNC unflavored protein powder.  Sweeten to taste with Splenda or whatever sugar substitute you use.  It is sooooo good.  I'm actually drinking this yummy chocolate shake as I type.

Well I open my email account this morning and there it is.... I have been given a "Blog Star Award" by addyourblog.com!  I never would have thought that my blog would catch on so fast.  And much less be given an award in such a short period of time.  I am very honored and I have all of you to thank for putting my blog out there.

Looking for a Logo!



Well my friends I want to update the look to Bye Bye Pounds, but I'm not very artistic myself.  So, I'm hoping that some kind souls out there will be willing to give me a hand here.  I'm looking for a new logo that I can use for my header image.  Any help or suggestions would be greatly appreciated!  And heck if someone is actually willing to do one up for me, I would be very much obliged :)

I look forward to seeing some good suggestions from you guys.
